Meet Sally Strawberry, a delicious moist vanilla cupcake with a big swirl of strawberry frosting with a sprinkle of white chocolate flakes alongside a cake topper with any photo or image.

This recipe will take roughly 45 minutes and produce 24 cupcakes.

Ingredients:

For the vanilla cupcakes:

  • 350g of plain flour.
  • 400g of sugar
  • 240ml of milk
  • 2 large eggs
  • 150g of butter, melted
  • 2tsp baking powder
  • A pinch of salt
  • 1tbsp of vanilla extract

For the strawberry frosting:

  • 250g of butter, room temperature
  • 500g of icing sugar
  • 50g of strawberry puree
  • 1tbsp of vanilla extract
  • 2 drops of pink food coloring
  • Decoration of your choice, we recommend white chocolate flakes with a cake topper.

Instructions:

For the vanilla cupcakes:

  1. Preheat an electric oven to 190ºC.
  2. In a large bowl, add all your dry ingredients. Dont forget to sift the baking poder and plain flour before adding to the mix.
  3. In another bowl, mix your melted butter, milk, eggs and vanilla extract. Whisk those together.
  4. Combine both and mix until you get a clump free batter.
  5. Fill ¾ of your cupcake liners to leave enough room for them to rise.
  6. Bake for 15 minutes or until golden. Keep an eye on them after 12 minutes, remember ovens may vary.
  7. When baked and you can stick a toothpick or a knife into the middle and it comes out clean, take them out of the oven and place on the side to cool.

For the strawberry frosting:

  1. Mix your room temperature butter, vanilla extract and strawberry puree together. You can do this with an electric mixer or by hand, either way will work perfectly.
  2. Slowly incorporate your sifted icing sugar. If you are using an electric mixer put it in at low speed until the frosting is ready.
  3. Add the 2 drops of pink food coloring and mix it in high speed for 20 – 30 seconds to give it a last good stir.

To assemble:

  • Fill a pastry bag with your strawberry frosting and with the help of a star tip make a big swirl on top of each cupcake.
  • Grate some white chocolate and sprinkle on top of each cake
  • Place your cake topper on an angle on each cake.
